I Want the Moon Too!

ONCE UPON A TIME, in a kingdom by the sea, there lived a little Princess named Lenore. She was ten years old, going on eleven. One day Lenore fell ill of a surfeit of raspberry tarts and took to her bed.

A Resourceful Woman

peterpeter Peter Peter, pumpkin eater, had a wife but couldn't keep her. He put her in a pumpkin shell, and there he kept her very well.

Until she finally used her head, and turned it into PUMPKIN BREAD.

    THE RECIPE: 2 eggs 1 cup pumpkin purée ½ cup vegetable oil ¼ cup milk (or water) ½ teaspoon nutmeg ½ teaspoon cinnamon ½ teaspoon allspice cloves, to taste 1½ cups flour (¾ white, ¾ whole wheat) 1 cup brown sugar 1 teaspoon baking soda optional - chopped walnuts or pecans, raisins

Preheat oven to 350º. Beat eggs, add the rest of the wet ingredients, spices. Mix. Stir in dry ingredients, without overbeating. Stir in nuts, if you like. Dump it all into an oiled bread pan and bake, 50 - 60 minutes or until an inserted toothpick comes out dry.
